Cod in butter recipe details
Ingredients
4 medium | cod steaks |
50 g | unsalted butter |
2 medium | shallots, finely chopped |
1 dash(es) | lime juice |
1 sprig(s) | parsley. finely chopped |
fresh lemon juice | |
salt and freshly ground pepper, to taste |
Instructions
Preheat oven to 200°C.Melt the butter in a pan and add the shallot, cook for five or six minutes on medium heat until they soften.
Put the fish into a greased oven proof dish, cover with the butter, shallots and season with pepper to taste. Then cook in a preheated oven for 10 minutes at 200°C.
Remove from the oven and cover the dish carefully with foil, reduce the heat to 180°C and bake for a further 15-20 minutes. To prevent cod from drying out, baste with a bit of butter.
Remove from the oven and pour the liquid from the oven dish into a small pan, add a teaspoon of lemon juice and the parsley and stir over a medium heat for five minutes.
Serve cod with the sauce, mashed potatoes and fresh peas.
