Cod fillet with herb walnut crust recipe details
Ingredients
½ tbsp | olive oil |
1 | shallot, finely diced |
30 g | walnuts, chopped |
100 g | wholemeal breadcrumbs |
1 tbsp | fresh dill, chopped |
1 tbsp | fresh parsley, chopped |
4 g | skinless fillets of cod |
Instructions
Preheat the oven to 200°C.Heat the olive oil in a pan and sauté the shallot for 2-3 minutes. Take off the heat and stir in the walnuts, breadcrumbs and herbs.
Using your hands, squeeze the crumb mixture gently together to make a paste. Press onto the fillets.
Place the cod fillets on a baking sheet and cook for 8-10 minutes until the fish is cooked through and the crust is golden and crisp.
