Cod Fillet with Herb Walnut Crust recipe
|½ tbsp||olive oil|
|1||shallot, finely diced|
|30 g||walnuts, chopped|
|100 g||wholemeal breadcrumbs|
|1 tbsp||fresh dill, chopped|
|1 tbsp||fresh parsley, chopped|
|4 g||skinless fillets of cod|
Preheat the oven to 200°C.
Heat the olive oil in a pan and sauté the shallot for 2-3 minutes. Take off the heat and stir in the walnuts, breadcrumbs and herbs.
Using your hands, squeeze the crumb mixture gently together to make a paste. Press onto the fillets.
Place the cod fillets on a baking sheet and cook for 8-10 minutes until the fish is cooked through and the crust is golden and crisp.
