Cream puffs with a cheese and tomato filling recipe details
Ingredients
50 g | butter, soft |
salt | |
125 g | flour |
4 medium | eggs |
75 g | Gorgonzola cheese, crumbled |
175 g | cream cheese |
2 tbsp | milk |
8 sprig(s) | basil, chopped |
35 g | sun-dried tomatoes in oil, drained, chopped |
salt and freshly ground black pepper |
Instructions
In a saucepan, bring 250ml water with the butter and a good pinch of salt to a boil. When the butter has melted, tip the flour, all in one go, with one hand into the mixture, while you beat the mixture vigorously with the other hand. Stir until you have a smooth ball of pastry that has left the sides of the saucepan clean; this will probably take less than a minute. Take from heat and stir in the eggs, one at a time, stirring after each addition until the pastry is smooth and well combined.Preheat the oven to 200°C.
Transfer the choux pastry into a piping bag with a star nozzle and pipe small puffs onto a lined baking tray. Bake for approximately 30 minutes or until golden brown. Allow to cool, then horizontally half the puffs.
Mix together the cheese, cream cheese, milk, tomatoes and the basil. Season to taste with salt and pepper. Spread the bottom side of the puffs generously with the cream mixture. Top with the upper part of the puffs and serve.
