Cream of potato soup with prawns recipe details
Ingredients
4 large | prawns, peeled and deveined |
400 g | potatoes, peeled |
1 | carrot, sliced |
1 | onion, chopped |
1 tsp | butter |
500 ml | vegetable stock |
6 sprig(s) | chives, chopped |
1 tbsp | lemon juice |
1 tsp | oil |
50 g | crème fraîche |
salt and pepper |
Instructions
In a saucepan, melt the butter and sauté the onions. Add the potatoes and the carrots and cook stirring for 5 minutes. Pour in the stock and bring to a boil. Reduce the heat and simmer for 20 minutes.Thread the prawns onto 2 skewers. Sprinkle with lemon juice. In a pan, heat the oil. Fry the skewers for a minute per side or until the prawns are pink and just done. Season with salt and pepper.
Purée the soup with a hand blender. Stir in the cream and season to taste with salt and pepper. Bring to the boil again, then take from heat.
Ladle the soup into warmed soup bowls and serve garnished with the skewers and chives.
