Broccoli Chowder recipe

|1 medium||onion, finely chopped|
|120 g||Cheddar cheese, grated|
|250 ml||vegetable stock|
|salt and freshly ground pepper, to taste|
Bring some water (about 250 ml)to a boil and add broccoli and onion. Cover and leave to simmer for 5 minutes or until tender. Do not drain.
Add milk, soup or stock and cheese. Season with salt and pepper. Cook until heated through, stirring frequently. Top with additional cheese.
