Crashed potatoes recipe details
Killer crispy browned red pototoes are crushed with rosemary, salt, and pepper – simple and delicious!

Ingredients
Serves: 6- 1/4 cup olive oil, or as needed
- 2 pounds new potatoes, scrubbed
- 1 teaspoon kosher salt, or to taste
- 1/2 teaspoon ground black pepper, or to taste
- 1 teaspoon minced, fresh rosemary
Preparation method
Prep: 15 mins | Cook: 25 mins1. Pre-heat oven to 425 degrees F. Rub a baking sheet generously with olive oil.
2. Fill a pot with water and bring it to a boil. Add a couple of pinches of salt to the water. Boil the potatoes until they slide off the fork when pierced- about 10 minutes or so. Drain potatoes.
3. Put the potatoes on the cookie sheet and spread them out a bit. Take a potato masher or a big fork or even a meat tenderizer, and smash the potatoes into the pan creating little smushed potato piles.
4. Brush the potatoes generously with olive oil. Sprinkle with kosher salt, pepper to taste, and chopped fresh rosemary (or chives, or thyme…whatever).
5. Put the potatoes into the top rack of the 425 degree oven for 20 to 25 minutes or until they’re crispy brown on top. MMMMMMM
