Cranberry delight spread recipe details
This is a festive spread that goes great with any kind of cracker. It was given to me by a friend who has made it for years. It’s especially nice during the holidays, but tasty enough that you would never want to have it only once each year. It’s a cream cheese based spread with orange zest, pecans, and dried cranberries providing an excellent supporting role. Dessert, hors d’oeuvre, or something else? I’m not sure, but I hope you like it.

Ingredients
Serves: 3- 1 (8 ounce) package cream cheese
- 2 tablespoons frozen orange concentrate, thawed
- 1 tablespoon sugar
- zest of 1 orange
- 1/8 teaspoon cinnamon
- 1/4 cup minced dried cranberries
- 1/4 cup finely chopped pecans (optional)
- garnish with a small mint leaf (optional)
Preparation method
Prep: 15 mins | Cook: 5 mins | Extra time: 1 hour, chilling1. In a small mixing bowl, beat softened cream cheese, orange juice concentrate, sugar, orange zest (stay with the orange stuff, not the white portion), and cinnamon on medium speed until fluffy.
2. Stir in cranberries and pecans. Refrigerate for one hour or put in freezer for 30 minutes.
3. Garnish with mint leaf or as desired.
4. Spread on cracker and try to eat just one.
