Cranberry Cheesecake Bars recipe
Ingredients
200 g | flour |
120 g | rolled oats |
150 g | brown sugar, plus 1 extra tablespoon |
230 g | butter |
230 g | cream cheese |
400 ml | condensed milk |
60 ml | fresh lemon juice |
400 ml | cranberry sauce |
2 tbsp | cornstarch |
Instructions
Preheat oven to 180°C. Line a 22×30 cm baking pan with non-stick foil.
Combine flour, oats, sugar and butter. Mix until crumbly. Take our 300 g of mixture and set aside for later use. Press remaining mixture into bottom of the prepared baking pan and bake until lightly browned, about 15 minutes.
Beat cream cheese until smooth, then add condensed milk and lemon juice, mixing until completely combined. Pour evenly over warm bottom layer crust.
In another bowl combine cranberry sauce with brown sugar and cornstarch. Mix until combined. Drop mixture by spoonsful over the cream cheese layer. Sprinkle top with reserved crumb mixture.
Bake for 45 minutes or until top is golden brown. Cool completely before cutting and refrigerate before serving.
