Ingredients
Serves: 8- 4 large potatoes
- 1 small onion, finely chopped
- 1 celery rib, finely chopped
- 1 tablespoon butter
- 2 garlic cloves, minced
- 1/2 cup sour cream
- 2 (6 ounce) cans lump crabmeat, drained
- 1/2 cup milk
- 1/4 teaspoon salt (or more, to taste)
- 1/4 teaspoon ground pepper (or more, to taste)
Preparation method
Prep: 35 mins | Cook: 20 mins1. Poke potatoes with a fork a few times each, then place on a plate and microwave on HIGH for 18 to 22 minutes, until fork-tender. Cool, then slice in half and use a spoon to dig out the insides.
2. Preheat oven to 375 degrees F.
3. Melt butter in skillet over medium heat. Cook onion and celery in melted butter for about 5 minutes, then add garlic and cook for 30 more seconds. Pour into mixing bowl.
4. Add potato insides, sour cream, crabmeat, milk, salt and pepper. Smash together until smooth, then fill potato shells with mixture and place on baking sheet.
5. Bake for 20 to 25 minutes, until hot. Serve.
