Couscous with zucchini recipe details
Ingredients
200 g | couscous |
400 ml | vegetable broth |
1 | red bell pepper, seeded, chopped |
2 medium | zucchini, peeled, sliced |
2 tsp | olive oil |
1 tbsp | balsamic vinegar |
1 clove(s) | garlic, minced |
salt and pepper, to taste |
Instructions
Bring chicken broth to a boil in a medium saucepan over medium heat. Add couscous and red pepper. Cover, remove from heat and let stand for 5 minutes.Heat olive oil in a skillet, add zucchini, and ccok until zucchini is tender. Add vinegar and garlic. Cook until heated through.
Spoon couscous onto a serving platter and arrange zucchini slices around.
