Ingredients

200 g couscous
400 ml vegetable broth
1  red bell pepper, seeded, chopped
2 medium zucchini, peeled, sliced
2 tsp olive oil
1 tbsp balsamic vinegar
1 clove(s) garlic, minced
salt and pepper, to taste

Instructions

Bring chicken broth to a boil in a medium saucepan over medium heat. Add couscous and red pepper. Cover, remove from heat and let stand for 5 minutes.

Heat olive oil in a skillet, add zucchini, and ccok until zucchini is tender. Add vinegar and garlic. Cook until heated through.

Spoon couscous onto a serving platter and arrange zucchini slices around.
