Couscous with sauteed vegetables recipe details

Ingredients
Serves: 4- 1 cup vegetable broth
- 3/4 cup uncooked couscous
- 1 yellow summer squash, chopped
- 3/4 cup chopped carrot
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped sweet onion
- 2 tablespoons butter
- 1/2 tesapoon Italian seasoning
- 1/2 teaspoon lemon-pepper seasoning
Preparation method
Prep: 10 mins | Cook: 15 mins1. Pour broth into saucepan and bring to a boil over medium heat. Pour in couscous, break up clumps of grain with a fork, then remove from heat. Cover. Let the couscous stand to absorb the liquid for about 10 minutes.
2. While couscous is standing, melt butter in skillet. When butter is hot, add squash, carrot, green pepper, and onion. Cook, stirring frequently, for about 7 minutes, then add Italian seasoning and lemon pepper.
3. Toss couscous with vegetables. Serve.
