Couscous with currants recipe details
Ingredients
180 ml | chicken broth |
60 g | couscous |
1 tsp | olive oil |
2 tbsp | green onions, chopped |
1 clove(s) | garlic, minced |
50 g | tomatoes, diced |
2 tbsp | currants |
1 dash(es) | cumin, ground |
2 tbsp | fresh parsley |
2 tbsp | lemon juice |
¼ tsp | pepper |
Instructions
In a medium saucepan bring chicken broth to a boil and stir in couscous. Remove from heat, cover and let stand 5 minutes.Heat oil in a medium skillet over medium heat. Add onions and garlic and sauté fo 1 minute.
Add cooked couscous, tomatoes, currants and cumin. Cook until thoroughly heated and then add the remaining ingredients.
