Ingredients

180 ml chicken broth
60 g couscous
1 tsp olive oil
2 tbsp green onions, chopped
1 clove(s) garlic, minced
50 g tomatoes, diced
2 tbsp currants
1 dash(es) cumin, ground
2 tbsp fresh parsley
2 tbsp lemon juice
¼ tsp pepper

Instructions

In a medium saucepan bring chicken broth to a boil and stir in couscous. Remove from heat, cover and let stand 5 minutes.

Heat oil in a medium skillet over medium heat. Add onions and garlic and sauté fo 1 minute.

Add cooked couscous, tomatoes, currants and cumin. Cook until thoroughly heated and then add the remaining ingredients.
