Couscous with courgettes and tomatoes recipe details
Ingredients
500 ml | couscous |
300 ml | chicken stock |
200 ml | vegetable stock |
2 | courgette, sliced |
6 | cherry tomatoes, quartered |
1 clove(s) | garlic, diced |
2 tbsp | olive oil |
salt and freshly ground black pepper, to taste |
Instructions
In a saucepan, bring chicken stock and vegetable stock to a boil. Stir in the couscous, cover and allow to stand until all liquid is soaked up.In a pan, sauté the garlic until lucent. Add courgettes and sauté for 2-3 minutes. Add tomatoes and cook stirring for another minute.
Transfer the couscous into a warmed serving bowl and add the vegetables. Toss until well combined and season to taste with salt and pepper.
