Couscous with caramelised cherries recipe details
Ingredients
1 glass(es) | morello cherries (750g) |
750 ml | apple juice |
½ packet(s) | custard powder, vanilla flavoured |
3 tbsp | sugar, 2-4 tbsp. |
¼ stick(s) | cinnamon |
1 tsp | vanilla extract |
200 g | couscous |
2 tbsp | butter |
1 tbsp | almond syrup, if desired |
fresh mint, to garnish |
Instructions
Drain the cherries. Measure 375ml of the apple juice in a measuring jug. Mix the custard powder with 4 tablespoons of the apple juice. In a saucepan, melt 1-2 tablespoons of sugar over medium heat until golden yellow. Deglaze with the remaining apple juice to dissolve the caramelised sugar. Add in the apple juice and custard powder mixture and bring to a boil. Add in the cherries and the cinnamon stick and bring again to a short boil. Remove from heat and fish out the cinnamon stick.In a separate saucepan bring the remaining 375ml apple juice with 175ml water to the boil. Add the vanilla extract and pour in the couscous in a thin stream while stirring. Turn off the cooker and let the couscous soak for 8-10 minutes. Remove from the heat and allow the couscous to cool.
Heat butter, add the remaining sugar and the couscous. Cook over high heat for approximately 3 minutes.
Spoon the couscous in dessert bowls, cover with cherry compote and sprinkle with almond syrup, if desired. Garnish with mint leaves and serve.
