Ingredients
1 | onion, chopped |
1 clove(s) | garlic, chopped |
5 tbsp | extra virgin olive oil |
250 ml | vegetable stock |
200 g | couscous |
5 | tomatoes, diced |
10 | olives, pitted and sliced |
½ bunch(es) | parsley, chopped |
200 g | Feta cheese, crumbled |
3 tbsp | balsamic vinegar |
salt and pepper | |
sugar | |
1 pinch(es) | cumin |
cayenne pepper | |
150 g | young spinach, stems removed, washed and spin dried |
Instructions
In a pan heat 1 tablespoon of oil. Sauté the onion and the garlic until lucent. Pour in the stock and 2 tablespoons of the oil. Stir in the couscous. Remove from the heat and allow to soak for 15 minutes.
Whisk together the vinegar and the remaining oil. Season with salt, pepper and sugar.
Season the couscous with cumin and cayenne pepper. Stir in the tomatoes, parsley, olives, spinach and Feta cheese and pour over the dressing. Mix well. Check seasoning and correct if necessary.
