Ingredients
2 | onion(s), finely chopped |
2 tbsp | vegetable oil |
400 g | couscous |
150 g | dried apricots |
150 g | dried raisins |
150 g | dried prunes |
150 g | dried apples |
1 tsp | nutmeg, ground |
1 tsp | cinnamon powder |
1 tsp | coriander, ground |
500 ml | vegetable stock |
Instructions
Heat oven to 180°C. Heat oil in Dutch oven over medium heat.Cook onions in oil about 2 minutes, stirring frequently, until tender. Add broth and cook for 5 minutes, stirring occasionally. Add couscous and cook until couscous has the desired softness and consistency. Stir in dried fruit. Cover and bake 40 – 50 minutes.
