Courgette Rolls with Anchovies recipe

Ingredients
2 medium | courgettes, thinly sliced lengthwise |
1 large can(s) | anchovy fillets |
1 tbsp | balsamic vinegar |
4 tbsp | oil |
8 | black olives, sliced |
salt and freshly ground black pepper | |
1 tsp | oregano leaves |
toothpicks | |
sugar |
Instructions
Fry the courgettes in oil from both sides until golden brown. Allow to cool.
Cover each courgette slice with one anchovy fillet and some olive slices. Season with pepper. Roll up the courgette slices and fix with toothpicks.
Mix together the oil and the balsamic vinegar. Season with salt, pepper and sugar. Sprinkle the courgette rolls with the dressing.
Serve garnished with fresh oregano leaves.
