Country chicken medley recipe details
This tangy, Southwestern-inspired chicken dish is simmered until all the vegetables are tender, then enhanced with spicy cheese.

Ingredients
Serves: 6- 2 pounds chicken tenders
- 1 (14 ounce) can tomatoes with chiles
- 1 (14 ounce) can corn
- 1 (14 ounce) diced potatoes
- 1 onion, finely chopped
- 1 green bell pepper, chopped
- 1 carrot, chopped
- 2 tablespoons lemon juice concentrate
- 2 tablespoons lime juice concentrate
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 6 ounces “Fiesta Blend” (or Pepper Jack) cheese
Preparation method
Prep: 10 mins | Cook: 50 mins1. Place all ingredients except for cheese in a soup pot on stove and bring to a simmer. Let simmer uncovered until carrots and green peppers are tender, about 45 minutes.
2. Drain most of the liquid, leaving about 1/2 cup in the soup pot. Then add cheese and stir in until fully melted.Serving Suggestion
Serve over pasta or rice.
