Country breakfast hangover bowl recipe details

Ingredients
Serves: 4- 1 tablespoon olive oil
- 5 cups cubed, cooked potatoes
- salt and pepper to taste
- 1 teaspoon olive oil
- 1 teaspoon minced garlic
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 8 eggs
- 2 cups shredded Cheddar cheese
Preparation method
Prep: 15 mins | Cook: 30 mins1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the potatoes in the hot oil until brown and crispy on the outside, about 20 minutes. Season the potatoes with salt and pepper to taste during the last few minutes of cooking.
2. Meanwhile, heat another teaspoon of olive oil in a skillet over medium heat. Cook the garlic, onion, and peppers until tender, about 10 minutes. Season with salt and pepper to taste, then mix with the potatoes and spread into a 9×13-inch baking dish.
3. Preheat broiler.
4. Scramble the eggs in a pan, then spread evenly over the potatoes. Sprinkle with Cheddar cheese.
5. Cook under the broiler until the cheese has melted.
