Cottage Cheese Banana Bread recipe
Ingredients
For the cake: | |
230 g | flour, self-raising |
½ tsp | baking powder |
100 g | castor sugar |
3 tbsp | butter |
230 g | cottage cheese |
4 tbsp | sour cream |
3 medium | bananas |
For the Icing: | |
100 g | confectioners sugar |
1 small | lemon, grated rind and juice |
Instructions
Preheat the oven to 180°C. Grease and line the loaf tin.
Cake:
Sift together the flour and baking powder into a bowl.
In a separate bowl, cream together the butter, sugar and cottage cheese. Add the sour cream and mix well.
Mash the bananas with a fork and add them into bowl with the creamy cheese mixture, alternately with the flour mixture.
Pour into the tin and bake for 1 hour. Turn out onto a wire rack to cool.
Icing:
Mix together th icing sugar and the rind. Add enough lemon juice to make a thick icing. Spread over the cooled cake.
