Ingredients

150 g | flour |
150 g | yellow or white cornmeal |
3 tbsp | sugar |
1 tbsp | baking powder |
½ tsp | salt |
250 ml | milk |
1 | egg |
100 g | fresh or frozen corn kernels |
Instructions
Preheat oven to 400°F/200° C. Butter standard muffin tins.
In a frying pan over medium heat, fry the bacon until crisp. Cool and drain on paper towels
Reserve 50 ml of the drippings. Crumble the cooled bacon and set aside. In a medium bowl, stir and toss together the flour, cornmeal, sugar, baking powder and salt. Set aside.
In a small bowl, whisk together milk, egg, corn kernels and reserved bacon drippings until blended. Add the combined dry ingredients, along with the crumbled bacon, and stir until blended. Spoon into the prepared muffin tins, filling each cup about two thirds full.
Bake until a toothpick inserted in the centre of the muffin comes out clean, about 15 minutes. Let cool in the tins for 3 minutes, and then remove muffins from tins.
