Colourful chicken and vegetable skewers recipe details
Ingredients
600 g | chicken breast, diced |
250 g | chicken liver, diced |
2 clove(s) | garlic, minced |
130 ml | oil |
2 tbsp | lemon juice |
80 ml | red wine, dry |
1 | yellow bell pepper, diced |
2 | courgettes, sliced |
12 | cherry tomatoes |
12 | button mushrooms |
skewers | |
salt and pepper | |
1 tbsp | oregano |
Instructions
In a bowl, combine the chicken breast and liver with garlic, oil, lemon juice, red wine and oregano. Season with pepper. Mix well. Cover and allow to steep for 4 hours.Onto skewers, thread alternately cherry tomatoes, chicken breast, courgette, liver, bell pepper and mushroom, until the ingredients are used up.
Grill the skewers over medium hot charcoal for 20 minutes or until the meat is tender. Season with salt and pepper.
