Colorful Rice Pilaf

6 cups chicken broth
4 cups basmati rice
2 Tablespoons olive oil
1 cup diced onion
1 cup diced red bell pepper
1 cup diced green bell pepper
1/2 cup cooked and drained black beans
Salt and pepper to taste

Bring chicken broth to full boil. Add rice, stir and bring to boil. Lower heat to simmer, cover and cook 15 minutes. Do not open lid during cooking. While rice is cooking, saute vegetables in olive oil until tender. Add vegetables and beans to rice and season to taste with salt and pepper before serving.

Serves: 24 (1/2-cup servings).
