Coffee log recipe details
Ingredients
3 medium | eggs |
80 g | caster sugar |
80 g | flour |
30 ml | coffee essence |
150 ml | whipping cream |
icing sugar |
Instructions
Grease and line a 18 x 28 cm (7x 11 inch) tin. Preheat oven to 200°C.Combine eggs and sugar in a large bowl and place it over a pan of hot water. Whisk together until doubled in volume and thickened. Add half of the coffee essence.
Pour the mixture into the prepared tin and bake for 8 – 10 minutes.
Turn out the cake onto greaseproof paper over a damp tea towel and trim the edges. Roll up the cake with the paper inside. Leave to cool for about 30 minutes, covered with the damp tea towel.
For the filling, whisk the cream until stiff, then fold in the remaining coffee essence.
Unroll the coffee log and remove the paper. Gently spread with the filling and re-roll. Dust with icing sugar before serving.
