Cod with lentils recipe details
Ingredients
600 g | cod |
2 tsp | olive oil |
2 clove(s) | garlic, minced |
250 g | lentils |
2 medium | onions, chopped |
400 g | canned tomatoes |
240 ml | vegetable broth |
30 g | fresh parsley, chopped |
Instructions
Heat oil on medium heat in a large skillet. Sauté onions softened. Add lentils, tomatoes and broth. Bring to a boil and simmer for 20-25 minutes, until lentils are beginning to soften.Add cod, cover, and cook for 8-10 minutes. To serve, garnish with fresh parsley.
