Ingredients
1 ½ kg | red onions, thinly sliced |
2 tbsp | olive oil |
100 g | golden caster sugar |
½ tsp | chili flakes |
thyme sprigs | |
300 ml | red wine vinegar |
1 glass(es) | red wine |
½ glass(es) | port |
Instructions
In a pan heat the oil. Add onions, chili and thyme and sauté over medium-low heat, stirring frequently, until the onions are soft. Add the sugar and cook stirring until caramelized and golden.Deglaze with port, red wine and vinegar. Simmer for 20 minutes.
Fill the onion jam into sterilized jars up to the rim. Seal with screw caps and allow to cool. Store on a cool and dark place.
