Delicious blend of fish, potato, and herbs, fried to a crisp cake….These go great with baked beans, lettuce, and tomato.
Ready in: 30 mins

Ingredients

Serves: 4
  • 1 egg
  • 1 pound cooked cod fish (flaked)
  • 3 cups mashed potato
  • 1 teaspoon seasoning salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon thyme leaves
  • 1 small onion (chopped or grated)
  • 2 tablespoons chopped parsley
  • flour
  • cooking oil

Preparation method

Prep: 10 mins | Cook: 20 mins

1. Beat egg in a bowl.
2. Add flaked cod fish and mashed potato. Mix well.
3. Add salt, pepper, thyme, onion and parsley.
4. 4. Form mixture into ice cream scoop sized balls and dust/coat with flour.
5. 5. Cook in pan with cooking oil.
6. 6. Flatten into cake about 1/4 inch thick before removing from pan and golden on both sides.
7. 7. Drain on paper towels.
