Ingredients

Serves: 12

• 4 pounds sweet potatoes, peeled and cubed
• 1/2 cup chopped pecans
• 1/2 cup flaked coconut
• 1/3 cup white sugar
• 1/3 cup packed brown sugar
• 1/4 cup butter, melted
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon salt
• 1/2 teaspoon coconut extract
• 1/2 teaspoon vanilla extract

Preparation method

Prep: 10 mins | Cook: 4 hours

1. Coat the bowl of a 5 or 6-quart slow cooker with butter. Put the potatoes into the slow cooker.
2. In a mixing bowl, whisk together remaining ingredients except for the extracts. Pour over the potatoes, then cover.
3. Cook on LOW for 4 hours, then add extracts and stir to combine. Serve.
