Classic southern fried chicken recipe details
Your pantry has almost all you need to make classic fried chicken. Nothing out of the ordinary here, just some basic spices. Add the chicken and buttermilk. If you want to make a “spicy” version, try upping the amount of cayenne.

Ingredients
Serves: 6- 2 cups buttermilk
- 3 cloves garlic, minced
- 1 egg, lightly beaten
- 1 tablespoon paprika
- 2 teaspoons dry mustard
- 2 teaspoons salt
- 3 pounds chicken legs (about 12)
- 2 cups flour
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cayenne pepper
- 3 cups vegetable oil, for frying
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 15 mins, marinating1. Combine buttermilk, garlic, egg, paprika, mustard, and 1 teaspoon salt in a large plastic bag. Add the chicken legs, seal bag, and turn to coat. Refrigerate for 15 minutes to marinate.
2. Stir flour, onion powder, garlic powder, cayenne pepper, and 1 teaspoon salt together in a shallow pie pan.
3. Pour buttermilk marinade into a bowl and take chicken out. Dredge chicken legs in the seasoned flour, then dip in the buttermilk and dredge again in flour. Set on wax paper to rest for 15 minutes.
4. Fill a deep fryer with 3 cups oil, or as much oil as it takes to make a 2-inch layer. Heat to 350 degrees F.
5. Fry chicken in hot oil, working in batches, and cook until chicken reaches an internal temperature of 180 degrees F. Each batch will take about 15 minutes. Drain on paper towels and serve.
