Ingredients
750 g | chicken breast, diced |
125 g | prunes, stones removed |
2 tbsp | oil |
450 ml | chicken stock |
3 | tomatoes, peeled and diced |
salt and pepper | |
2 tsp | honey |
1 tbsp | freshly grated ginger |
50 g | raisins |
1 pinch(es) | curcuma |
1 pinch(es) | saffron |
150 ml | water |
1 stick(s) | cinnamon |
3 tbsp | sesame seed, roasted |
Instructions
Fry the chicken in oil until golden and crispy. Add the tomatoes, cinnamon and the stock. Season with salt and pepper. Bring to a boil. Reduce the heat, cover and simmer for 5 minutes.In a saucepan, combine the water, prunes, honey, ginger, raisins and the saffron. Cook over low heat until the prunes are soft.
With a slotted spoon take the chicken out of the sauce and arrange on preheated serving plates and keep warm. Bring the sauce to a boil and cook until slightly thickened. Stir in the prune mixture and bring to a short boil again. Season to taste with salt, pepper and curcuma.
Pour the sauce over the chicken and sprinkle with sesame seed. Serve with rice.
