Classic marinara sauce recipe details
I’ve made this recipe at least 50 times now which was passed on from my aunt. The sauce can be used as a base for vodka sauce, puttenesca sauce bolognese, or a Sunday gravy with meatballs, sausage and bracciole.

Ingredients
Serves: 10- 3 (28 ounce) cans whole San Marzano tomatoes (sweeter than regular canned tomatoes)
- 1/4 cup extra virgin olive oil
- 6 slices Pancetta (cured italian pork), roughly chopped
- 1 large yellow onion, diced
- 10 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 2 bay leaves
- 1 tablespoon salt
- 2 teaspoon ground black pepper
- 1 cup red wine
- 2 (6 ounce) cans tomato paste (do not throw cans away)
- 1 cup water
- 1/4 cup chopped Italian flat leaf parsley
- 2 teaspoon dried oregano
- 1/2 cup fresh basil
- 1/4 cup sugar
Preparation method
Prep: 20 mins | Cook: 1 hour 25 mins1. Puree the canned tomatoes in a blender or food processor until tomatoes become a sauce like consistency.
2. In a large pot, heat olive oil on medium heat.
3. Saute chopped pancetta until light brown, about 5 minutes.
4. Add onions, and continue cooking until onions begin to become translucent, about 5 minutes
5. Add garlic, and continue to saute for about three minutes. Do not let garlic start to brown.
6. Stir in red pepper flakes, bay leaves, salt and pepper. Cook for another minute. Mixture will thicken and start to turn a dark red.
7. Add red wine and let simmer 2 minutes.
8. Add the pureed tomatoes, tomato paste, and 2 tomato paste cans of water as well as an additional cup of water.
9. Stir in parsley and oregano.
10. Bring sauce to a boil, cover, reduce heat to low and let simmer 45 minutes. Stir occasionally.
11. Tear basil leaves by hand into the sauce and add sugar.
12. Simmer 15 more minutes. Add additional salt and pepper to taste.
13. Serve over pasta with fresh Parmesan cheese.
