Citrus swordfish with citrus salsa recipe details
Ingredients1. Swordfish steaks (1 ½ pounds)
2. olive oil (1tbsp)
3. pineapple juice concentrate, thawed (1tbsp)
4. fresh orange juice (1/2c)
5. cayenne pepper (1/4tsp)
6. orange, peeled, sectioned and cut into bite size pieces (1)
7. seeded and minced jalapeno pepper (2)
8. canned pineapple chunks, undrained (1/2c)
9. diced red pepper bell (1tbsp)
10. diced fresh mango (1/4c)
11. chopped fresh cilantro (1tbsp)
12. white sugar (2tsp)
13. orange juice (3tbsp)
Method of preparation
1. First to prepare salsa, take a bowl of medium size. Add mango, pineapple chunks, orange, orange juice (3 tablespoons), minced jalapeno, cilantro, sugar, diced red bell pepper in it. Mix all the ingredients well, cover the bowl with a lid and keep the salsa in the refrigerator.
2. Take a large bowl; add pineapple juice concentrate, cayenne pepper, olive oil and orange juice (1/2 teaspoon) in it. Then put swordfish steaks in it and toss it slowly to coat the steaks properly. Keep the bowl aside for about 30 minutes to marinate.
3. Take an outdoor grill; place an oiled rack in the grill about 6 inches away from the source of heat. Place the fish on grill rack and then grill it for about 10 to 15 minutes on each side. Grill the fish until it gets solid from center.
4. When the fish gets ready then remove it from the grill. Place the grilled fish in serving plate and serve it hot with prepared salsa.
