Ingredients
1 l | apple cider |
125 g | light brown sugar |
100 ml | honey |
1 tsp | ground cinnamon |
¼ tsp | ground nutmeg |
1 pinch(es) | salt |
2 tbsp | butter |
6 large | dessert apples, eg Golden Delicious, halved and cored – DO NOT PEEL |
75 g | sultanas |
Instructions
In a medium saucepan, combine the cider, sugar, honey, spices, salt and butter. Bring to a boil and then reduce heat and simmer for 25 minutes until syrupy.Preheat oven to Gas Mark 4, 180°C, 350°F.
Place the apples cut side down in a large baking dish. Pour the syrup over the apples and sprinkle the sultanas over the top. Tightly cover with foil and bake for 25-30 minutes until the apples are almost tender when pierced with the tip of a knife.
Remove from oven and carefully flip the apples over. Baste several times with syrup and re-cover with the foil. Return to the oven for another 5 minutes. Remove from oven and allow the syrup to set, while still covered for 15 minutes.
Baste before serving. Serve warm.
