Ingredients
1 | chicken, jointed |
50 g | butter |
1 | onion, peeled and diced |
30 g | flour |
430 ml | milk |
140 ml | dry cider (Somerset cider) |
115 g | freshly grated Cheddar cheese |
1 tsp | mustard |
salt and pepper |
Instructions
Preheat the oven to 180°C.In a frying pan melt half of the butter then lightly sauté the chicken pieces. Transfer into a casserole dish and roast for approximately 45 minutes.
In the meantime melt the remaining butter in a saucepan and sauté the onion gently until soft and transparent. Stir in the flour and cook stirring for 2-3 minutes. Remove the pan from the heat and whisk in the milk and cider gradually. Bring to the boil, stirring, and cook until the sauce thickens. Cook stirring for 2-3 minutes, remove from the heat and stir in 3/4 of the cheese. Season to taste with salt, pepper and mustard.
Pour the sauce over the cooked chicken and sprinkle with the remaining cheese. Heat the grill of your oven and place the casserole under the grill until golden brown.
Serve with green vegetables and potatoes in their jackets.
