Ingredients
1 cup cottage cheese
1/2 cup flour
4 eggs
6 Tablespoons melted butter
Instructions:

These were featured in the June 2005 Gourmet magazine.

Combine all ingredients in bowl and mix until you get a slightly lumpy batter. Drop on very hot griddle using 1/4 cup measure. Cook for about 2 minutes per side, until golden, but do not overcook. Pancakes will be creamy and tangy inside because of the cottage cheese. Serve with warm Vermont maple syrup.
