I got most of this from a magazine and have made a few changes (for the better, I hope). The whole family loves it – even my son who hates vegetables.
Ready in: 50 mins
Ingredients
Serves: 4- 2 cups cooked broccoli
- 1 cup frozen (thawed) or canned corn niblets
- 1/8 cup finely chopped red or white onion
- 1 cup shredded Cheddar cheese
- 3 eggs
- 3/4 cups milk
- 1/2 cup biscuit baking mix
- 1/4 teaspoon pepper (or more)
Preparation method
Prep: 20 mins | Cook: 30 mins1. Preheat oven to 375 degrees F (190 degrees C).
2. Lightly grease a deep dish pie plate. Spread cooked chopped broccoli on the bottom, then corn, onion and cheese.
3. In a medium sized bowl, whisk eggs until completely blended, add milk, biscuit baking mix and pepper. Blend throughly and pour over vegetable mixture.
4. Bake for 30 minutes until the top is browned. Let sit for a few minutes until serving.
