Ingredients

500 g butter
150 ml sunflower oil
500 g castor sugar
3 large eggs
2 tsp cardamom, grounded
1 tbsp ginger, grounded
500 ml dates, chopped
100 g walnuts, chopped
1 kg cake flour
500 ml cornflakes, crushed

Instructions

Cream butter until soft. Stir in oil until well blended. Add castor sugar and stir until light and fluffy. Beat in eggs, then stir in cardamom, ginger, dates and walnuts. Sift cake flour and stir into mixture to make a fairly stiff dough.

Roll out to about 3mm thickness on a light floured surface and scrape dough with a fork for a rough texture. Cut out star shapes with a biscuit cutter and coat tops with crushed cornflakes, pressing firmly.

Place on greased baking sheets and bake at 200°C for about 12 minutes or until golden.
