Christmas cornflakes biscuits recipe details
Ingredients
500 g | butter |
150 ml | sunflower oil |
500 g | castor sugar |
3 large | eggs |
2 tsp | cardamom, grounded |
1 tbsp | ginger, grounded |
500 ml | dates, chopped |
100 g | walnuts, chopped |
1 kg | cake flour |
500 ml | cornflakes, crushed |
Instructions
Cream butter until soft. Stir in oil until well blended. Add castor sugar and stir until light and fluffy. Beat in eggs, then stir in cardamom, ginger, dates and walnuts. Sift cake flour and stir into mixture to make a fairly stiff dough.Roll out to about 3mm thickness on a light floured surface and scrape dough with a fork for a rough texture. Cut out star shapes with a biscuit cutter and coat tops with crushed cornflakes, pressing firmly.
Place on greased baking sheets and bake at 200°C for about 12 minutes or until golden.
