Chorizo stir fry recipe details
Bring Spanish-style sausage into Chinese-style cooking, and you end up with a healthy, tasty and quick dinner.

Ingredients
Serves: 4- 1 head of cauliflower, cut into florets (or two cups pre-cut florets)
- 6 Spanish chorizo sausages (about 350 g/ 12 oz in weight)
- 1 onion, sliced thinly
- 3 cloves garlic, crushed
- 1 leek, trimmed and sliced thinly
- 2 carrots, sliced
- 1 large bulb fennel, sliced thinly
- 4 tablespoons olive oil
- 3 tablespoons flour
- 1 cup chicken broth
- 1/2 cup water
- Salt and black pepper
Preparation method
Prep: 35 mins | Cook: 30 mins1. Bring a large pot of water to a boil. Put cauliflower florets in, let boil for one minute, then drain and set florets aside.
2. In a skillet over medium heat, saute the chorizo sausages until cooked through. Slice into bite-sized pieces.
3. Heat wok or large frying pan over a medium-high flame; add oil to coat the pan, then stir fry the onion for 5 minutes. Add garlic and leek and cook for 3 minutes, then add carrots and fennel. Cook for 5 minutes, then add cauliflower.
4. Sprinkle with flour. Continue to cook for 1 minute, then slowly pour in the broth and water; bring the liquid to a boil, add the chorizo, and cook on low heat for about 4 minutes to finish cooking the vegetables and to reheat the chorizo.
5. Season to taste with salt and pepper. Serve over rice.
