Chorizo puffs recipe details
Ingredients
225 g | puff pastry |
115 g | cured chorizo sausage, chopped |
50 g | cheese (any kind of mild, hard cheese), finely grated |
1 small | egg, beaten |
1 tsp | paprika powder |
Instructions
Roll out the pastry thinly on a floured surface. With a 7.5cm cutter cut out as many circles as possible, then re-roll the pastry and cut out more until you have 16 pastry rounds.Preheat the oven to 220/200°C, fan assisted.
Mix the chopped chorizo sausage and grated cheese in a bowl. Take one of the pastry rounds on the palm of your hand and place some of the chorizo mixture in the centre. With your other hand, pinch the edges of the pastry together to seal, just like making a small pasty! Proceed just the same with the other rounds.
Place the pastries on a baking sheet lined with baking paper and brush with the beaten egg. Using a small sieve, dust the top lightly with some of the paprika powder. Bake for 10 – 12 minutes until puffed and golden brown. Transfer to a wire rack and leave to cool for 5 minutes.
Serve still warm, dusted with the rest of the paprika powder.
These pastry puffs are perfect with a glass of cold sherry or beer and to accompany a wider selection of tapas.
