- Ingredients
- 7 eggs, separated
- 2 cups sugar, divided use
- 3 ounces Meyers rum
- 12 ounces chocolate chips
- 1 cup sugar
- 4 ounces heavy cream
- 1 ounce vanilla
Add 1 cup sugar and rum to egg yolks. Cook over double boiler until thick. In a separate double boiler, melt chocolate chips. Whip egg whites to make a meringue. Slowly add 1 cup sugar to whites while whipping. Whip cream with vanilla. Fold together yolk mixture, meringue, and chocolate until combined. Let sit in refrigerator overnight. Before serving, top mousse with whipped cream.
