Chocolate espresso cookies recipe details
- Ingredients
- 3 ounces unsweetened chocolate
- 2 cups semi-sweet chocolate chips
- 1/2 cup butter
- 3 large eggs
- 3 teaspoons fine dark coffee grounds
- 1 cup plus 2 Tablespoons sugar
- 3/4 cup flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

Preheat oven to 350 degrees. Melt unsweetened chocolate, 1 cups chocolate chips, and butter in saucepan, set aside. Beat eggs, coffee grounds, and sugar until ribbon forms when lifting whisk. Beat in chocolate mixture. Sift flour, baking powder, and salt into mixture and stir until just combined. Add remaining chocolate chips and stir until just mixed.
Drop 2 inches apart on greased cookie sheet. Bake 8 to 10 minutes until puffed and cracked on top. Remove from oven and cool for a full minute before transferring to rack to cool completely.
Yield: 2 dozen cookies
