Chocolate and hazelnut cake recipe details
Ingredients
6 | eggs, separated |
250 g | dark coating chocolate |
75 g | rusk, grated |
85 g | butter |
salt | |
125 g | hazelnuts, grated |
125 g | sugar |
5 tbsp | milk |
5 tbsp | cream, whipped |
icing sugar | |

Instructions
Melt 75g of the coating chocolate and chop another 75g. Whisk the butter with egg yolks and 1 pinch of salt until creamy. Stir in the melted chocolate, 50g rusk, hazelnuts and the chopped chocolate.Whisk the egg whites until stiff, while trickling in the sugar. Fold the beaten egg white into the egg yolk mixture. Coat a buttered cake form with the remaining rusk. Preheat the oven to 150°C.
Pour in the chocolate mixture. Tranfer the cake form into a water bath in the oven and bake for 15-20 minutes.
Bring the milk and the cream to a boil. Take from heat, add the remaining coating chocolate and stir until melted. Coat the cake with the chocolate icing and serve dusted with icing sugar.
