Heat oil and chocolate over low heat in a small saucepan, stirring until the chocolate is melted and the mixture is smooth.
Transfer to a mixing bowl and add sugar, eggs and vanilla. Beat with an electric mixer until smooth and well blended.
Mix in flour and baking powder and beat just until well incorporated.
Chill in the refrigerator overnight.
Preheat oven to 180°C and line a cookie sheet with parchment paper and lightly grease the paper.
Place the sugar in a flat bowl. Form the dough into 2-cm large balls and roll in the sugar until completely coated.
Place balls on prepared cookie sheet, 4 cm apart. Bake for 10-12 minutes, until the cookies are puffed. Remove to a rack to cool.
