Chocolate fairy cakes recipe details
Ingredients
60 g | dark chocolate, roughly grated |
60 ml | milk |
250 g | soft sugar |
2 tsp | espresso, very finely ground |
60 g | butter, at room temperature |
1 large | egg |
125 g | flour |
½ tsp | baking powder |
1 tbsp | cocoa powder |
For the glaze: | |
90 g | butter |
75 g | dark chocolate roughly grated |
1 ½ tsp | golden syrup |
To garnish: | |
white chocolate, finely grated |
Instructions
Preheat the oven to 160°C.Grease 24 moulds of a muffin tray with butter.
In a small saucepan heat stirring the milk with the chocolate and 100g sugar until the chocolate has melted. Remove from the heat and stir in the espresso. Allow to cool.
In a bowl whisk the butter with the remaining sugar for approximately 5 minutes or until creamy. Whisk in the egg. Sieve the flour, the baking powder and the cocoa powder on top of the mixture and fold in thoroughly. Fold in the cooled chocolate mixture. Evenly divide the batter in the greased moulds. Bake for 15-20 minutes. Transfer on a wire rack and allow to cool.
For the glaze:
Heat the butter, chocolate and the golden syrup over a bain-marie and stir until smooth. Allow to cool. With a hand blender, whisk the glaze until thickened but fluffy. Thickly brush the muffins on top with the glaze. Allow to get firm for approximately 1 hour.
Garnish with the grated white chocolate.
