Chinese Lemon Chicken recipe

|500 g||chicken breast fillets, the small ones|
|1 medium||eggs, yolks only|
|some||oil, for frying|
|For the sauce:|
|4 tbsp||lemon juice|
|2 tsp||soy sauce|
|1 tsp||dry sherry|
Mix egg yolk with salt and cornstarch.
Soak the chicken fillets in this mixture, turn them in the breadcrumbs and fry them till brown. Set aside on a dish and cover to keep warm.
Dissolve the cornstarch in the water and add all of the other ingredients.
Now heat the sauce in the wok till it gets thick and sticky.
Serve the fillets with the sauce on the side or pour the sauce over them, it’s up to taste.
Serve with white rice.
