Ingredients
Serves: 4- 1/2 cup fresh orange juice
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice-wine vinegar
- 1 1/2 teaspoons chile-garlic sauce
- 1 1/2 teaspoons cornstarch
- 1 tablespoon canola oil
- 12 ounces flank steak, halved and cut into 1/4-inch slices
- 1 tablespoon minced fresh ginger
- 2 teaspoons orange zest
- 3 cloves garlic, minced
- 1 cup sliced onion
- 1 pound broccoli florets
- 1 red bell pepper, sliced thinly
- 1/4 cup water
Preparation method
Prep: 20 mins | Cook: 10 mins1. Make a quick stir-fry sauce: combine orange juice, soy sauce, oyster sauce, vinegar, chile-garlic sauce, and cornstarch in a bowl. Whisk to incorporate.
2. Pour 1 teaspoon oil into a large skillet and place over high heat. When oil is very hot, cook beef strips in batches for about 2 minutes each batch, until no longer pink in the middle. (Add more oil for the second batch.) Transfer to plate.
3. Pour 1 more teaspoon of oil into the skillet and let the skillet reheat. Cook ginger, orange zest, and garlic in hot oil for 10 seconds, then add onion and cook for 1 minute.
4. Stir in the broccoli and bell pepper. Cook for 30 seconds, then pour water over the vegetables, cover the skillet, and cook for 90 seconds. Transfer vegetables to a plate.
5. Pour the stir-fry sauce into skillet and reduce over high heat for 1 minute. Sauce will thicken. Pour the vegetables and beef back into the skillet, stir to coat with the sauce, and reheat before serving.
