Chilled Watercress and Pear Soup recipe

|170 g||watercress, chopped|
|4||pears, peelded and diced|
|1 liter(s)||chicken stock|
|250 g||potatoes, peeled and diced|
|salt and pepper, to taste|
In a large saucepan, fry the onions in butter until soft. Pour in the chicken stock and potatoes, bring to a boil and cook for 20 minutes, until the potatoes are tender.
Stir in watercress and pears and cook for further 5 minutes. Puree the soup and stir in cream and milk. Season with salt and pepper to taste.
Allow to chill in the refrigerator for 7-9 hours and check the taste before serving.
