Ingredients

170 g watercress, chopped
4  pears, peelded and diced
1  onion, chopped
25 g butter
1 liter(s) chicken stock
250 g potatoes, peeled and diced
50 ml cream
3 tbsp milk
salt and pepper, to taste

Instructions

In a large saucepan, fry the onions in butter until soft. Pour in the chicken stock and potatoes, bring to a boil and cook for 20 minutes, until the potatoes are tender.

Stir in watercress and pears and cook for further 5 minutes. Puree the soup and stir in cream and milk. Season with salt and pepper to taste.

Allow to chill in the refrigerator for 7-9 hours and check the taste before serving.
