Chilled watercress and pear soup recipe details
Ingredients
170 g | watercress, chopped |
4 | pears, peelded and diced |
1 | onion, chopped |
25 g | butter |
1 liter(s) | chicken stock |
250 g | potatoes, peeled and diced |
50 ml | cream |
3 tbsp | milk |
salt and pepper, to taste |
Instructions
In a large saucepan, fry the onions in butter until soft. Pour in the chicken stock and potatoes, bring to a boil and cook for 20 minutes, until the potatoes are tender.Stir in watercress and pears and cook for further 5 minutes. Puree the soup and stir in cream and milk. Season with salt and pepper to taste.
Allow to chill in the refrigerator for 7-9 hours and check the taste before serving.
