Chili and rum chicken recipe details
Ingredients
1 | lime, juice and grated peel |
2 tbsp | butter |
5 tbsp | honey |
½ tsp | freshly ground nutmeg |
salt and freshly ground black pepper | |
4 | ripe cooking bananas, peeled and sliced |
450 ml | pineapple juice |
1 | onion, chopped |
2 clove(s) | garlic, minced |
1 | pineapple, peeled and diced |
4 | chicken breast fillets |
2 tbsp | oil |
chili flakes | |
4 tbsp | rum |
400 ml | chicken stock |
Instructions
Melt the butter. Stir in the honey, lime juice and lime zest. Season with salt and nutmeg. Preheat the oven to 175°C.Place the bananas into a buttered casserole dish. Drizzle with the honey marinade and bake for 15 minutes. Turn the bananas and add 200 ml of the pineapple juice. Bake for another 15 minutes.
Season the meat with salt and pepper. In a pan, heat the oil. Fry the chicken breast for 5 minutes on both sides Remove from the pan and set aside.
Sauté the onion and the garlic in the pan for some minutes. Season with salt and chili flakes. Pour in the remaining pineapple juice, the pineapples, rum and stock and bring to a boil. Simmer for 3 minutes. Return the chicken breast and simmer for 5 more minutes. Season to taste with salt, pepper and chili flakes.
Serve together with the baked bananas.
