Chicory Salad recipe
Ingredients
4 head(s) | Belgian endives / chicory, leaves separated |
2 tbsp | bacon, diced |
75 ml | beef stock |
salt and freshly ground black pepper | |
vinegar | |
1 tsp | butter |
Instructions
Fry the bacon in butter until crispy. Add the stock and bring to a boil. Season to taste with vinegar, salt and pepper. Allow to cool. Check seasoning and correct if necessary.
Arrange the chicory leaves on plates and drizzle with the dressing. Serve immediately.
