Ingredients
900 g | chicken thighs, boned and skinned |
250 g | shallots |
For the marinade: | |
1 tbsp | vegetable oil |
1 tbsp | balsamic vinegar |
1 tbsp | white wine vinegar |
1 tbsp | honey |
1 tbsp | water |
½ tsp | curry powder, e.g. Madras-Style |
1 tbsp | tomato sauce, ketchup |
1 pinch(es) | salt |
250 g | spicy mango chutney |
Instructions
Mix the ingredients for the marinade. Add the chicken and stir well. Store covered in the fridge for 3 hours.
Place the chicken in a casserole dish, add the marinade and the shallots.
Cover and bake in at fan oven at 170-180ºC for a total of 50-55 minutes. Uncover after 25 minutes and occasionally turn over the chicken pieces.
Serving Suggestion:Serve with rice and cucumber relish.
